Aioli is essentially a luxury flavored mayo, commonly flavored with garlic but also combined with everything from black truffles to chipotle peppers, according to American dining. It was just tons of garlic mashed with a mortar and pestle and emulsified with oil in southern France, specifically in Provence, where aioli (spelled 'aoli') originated, with no eggs or acid added.
